Delish Indian Chicken Curry and Cumin Rice 🐓

Our friend Jasmine makes great chicken curry, she learned from her mum who also makes the best chicken curry we have ever tasted! Complete with cumin rice and everything. Every time Jasmine would come back from "home home" she would bring some curry back and it was honestly the best thing ever. Which is why, when we tried this recipe from BBC Good Food, we were pleasantly surprised that it tasted super similar to Jasmine's. We just simply added more garlic, ginger, lime juice and spinach to supercharge this already great recipe.


Edits and Additions:

  • 60gr of ginger instead of 50gr

  • 10 garlic cloves instead of 6

  • 1/2 of a lime, squeezed

  • 2 handfuls of spinach


We won't retype the whole recipe here for the curry but here is how you can make your own Cumin Rice:



Ingredients

  • 400gr of rice, we used brown but you can also use basmati (just make sure you follow the water measurements for basmati)

  • 800ml of water (or basically double the amount of rice that you have)

  • 1tbsp butter

  • 1tbsp cumin seeds

  • 1 chicken stock cube

  • Dash of salt

Instructions

  1. Rinse your rice in cold water

  2. If you have a rice cooker, just put everything together in the cooker and let it do its thing (not forgetting to stir occasionally too)

  3. If you don't have a rice cooker, sauté the butter and cumin seeds on low-medium heat for around 1-2 minutes

  4. Once fragrant, add water, rice, chicken stock cube and salt

  5. Stir to combine and place the lid, turning the heat up to medium-high

  6. Wait for it to boil

  7. Once it has reached boiling point, decrease heat and occasionally stir until rice is cooked (usually takes up to 20-25 minutes if you have a lot of rice)

  8. Serve with curry, coriander leaves and a dollop of spiced yoghurt
